Lamb & Apple Curry

Ingredients

  • 500g diced lamb
  • 1tbsp flour seasoned with salt & pepper
  • ½-1tbsp curry powder
  • 1 onion
  • 1-2 peeled apples
  • 2 cups stock
  • 1 green capsicum
  • 2-3 tomatoes
  • Juice of ½ lemon
  • ½ cup sultanas 
  • 1tsp sugar 


Method

  1. Put flour, curry powder and lamb in plastic bag and shake
  2. Fry for 5 minutes then add chopped onion and apple then fry for 2 minutes
  3. Gradually blend in stock, boil till thickened 
  4. Simmer for 30 minutes then add remaining ingredients and continue cooking for 45 minutes 
  5. Serve with rice
