Brisket

What is it? How do you cook it?

Well, brisket is the cut of beef that comes from the breast or lower chest of the cow (scroll for more detail). As cows don’t actually have any collarbones, this part of the cow supports its weight. So, that means that there is a bit of connective tissue in brisket.
But that's good! Brisket is one of the best cuts for all that low and slow cooking that we love.

We absolutely love our brisket here, so we thought we should share our recipe for a prefect low & slow brisket.

The Rub

You’ll need about a 1.5-2kg piece of brisket

  • 4tbsp Paprika
  • 1tsp Cayenne pepper
  • 1tsp Ground white pepper
  • 1tbsp Ground black pepper
  • 1tbsp Garlic powder
  • 1tbsp chili powder
  • 1tbsp dried oregano
  • 1tbsp salt
  1. Place all ingredients into a bowl and combine
  2. Cover the brisket with the rub and place covered in the fridge for 30 minutes


The BBQ Sauce

  • 1tbsp olive oil
  • 4 cloves of garlic minced
  • 1 red onion, finely chopped
  • 2 cups tomato sauce
  • 1/3 cup Worcestershire sauce
  • ¼ cup apple cider vinegar
  • 4tbsp brown sugar
  • 3tbsp American mustard
  • 3tbsp honey
  1. Place the oil, garlic, and onions in a saucepan on medium heat until onions have browned and softened.
  2. Then place the remaining ingredients into the saucepan on medium heat until sugar had dissolved, and mixture has slightly thickened.


The Low & Slow  

  1. Place brisket fat side up into slow cooker (depending on your slow cooker size, you may need to cut the brisket in half)
  2. Pour on BBQ sauce and make sure all the brisket is covered
  3. Place the slow cooker on low for 8hrs (1.5kg) or 10hrs (2kg)
  4. Take brisket out of slow cooker and place into tray
  5. With the remaining liquid in slow cooker, place into saucepan and bring to simmer on medium heat and reduce
  6. Slice brisket and drizzle over BBQ sauce
